  • 4 cups Yukon Gold or Red-Skinned Potatoes hold their shape when boiled
  • 1 large Fresh Cucumber adds crunch
  • 2 medium Juicy Tomatoes sweet and tangy bursts
  • 1 small Red Onion sharp flavor
  • 1 cup Black Olives pitted
  • 1 bunch Fresh Parsley chopped
  • 1 cup Feta Cheese crumbled
For the Dressing
  • 1/2 cup Extra-Virgin Olive Oil rich mouthfeel
  • 1/4 cup Fresh Lemon Juice tangy lift
  • 1 tbsp Sumac unique citrusy flavor
  • 1 tsp Salt to enhance flavors
  • 1/2 tsp Black Pepper adds warmth

Method
 

Preparation
  1. Wash the potatoes and place them in a pot with cold water and a pinch of salt. Boil them until fork-tender.
  2. Prepare the dressing by whisking olive oil, lemon juice, sumac, salt, and black pepper in a bowl.
  3. Cool and cube the potatoes after draining them.
  4. Combine potatoes with parsley, onion, cucumber, tomatoes, olives, and feta in a bowl.
  5. Pour the dressing over the mixture and gently fold together to combine.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
