  • 2 cups Broccoli Florets Cauliflower or asparagus can also be used.
  • 2 cloves Minced Garlic for Broccoli Add more for a garlic lover.

Method
 

Step-by-Step Instructions
  1. Pat the chicken breasts dry, cut into 1 ½ inch pieces, and place in a bowl.
  2. In the bowl, mix half the seasoning blend, olive oil, lemon zest, and juice. Let marinate for 30 minutes.
  3. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Wash and halve the baby carrots and golden potatoes, place on sheet, drizzle with olive oil, and sprinkle remaining seasoning blend.
  5. Roast the vegetables in the oven for about 20 minutes.
  6. Add broccoli florets and minced garlic to the baking sheet, toss, and return to oven.
  7. Spread marinated chicken evenly over the vegetables and roast for another 15-20 minutes until chicken reaches 165°F (74°C).
  8. For a crispy finish, switch to broil for 1-2 minutes, watching closely to avoid burning.
