Preparation Steps
  1. Preheat your oven to 350°F (175°C). Prepare an 11x7-inch baking dish by greasing it or lining with parchment paper.
  2. In a food processor, combine the sifted flour, powdered sugar, salt, and softened butter. Blend until crumbly. Firmly press into the bottom of the dish and smooth it out. Bake for 18-20 minutes until golden.
  3. While the crust bakes, mix the granulated sugar and flour in a bowl. Beat in eggs one at a time, whisking until incorporated. Add grapefruit zest and juice, stirring until smooth.
  4. Pour the grapefruit filling over the baked crust. Return to the oven and bake for an additional 20 minutes until set and lightly golden.
  5. Allow to cool for about an hour in the pan, then refrigerate for at least 2 hours before slicing.
