Preparation Steps
- Preheat your oven to 350°F (175°C). Prepare an 11x7-inch baking dish by greasing it or lining with parchment paper.
- In a food processor, combine the sifted flour, powdered sugar, salt, and softened butter. Blend until crumbly. Firmly press into the bottom of the dish and smooth it out. Bake for 18-20 minutes until golden.
- While the crust bakes, mix the granulated sugar and flour in a bowl. Beat in eggs one at a time, whisking until incorporated. Add grapefruit zest and juice, stirring until smooth.
- Pour the grapefruit filling over the baked crust. Return to the oven and bake for an additional 20 minutes until set and lightly golden.
- Allow to cool for about an hour in the pan, then refrigerate for at least 2 hours before slicing.
