  • 3 medium Clementine Oranges Can substitute with mandarin oranges if needed.
  • 2 medium Kiwi Fruit Ensure they’re fully ripe for maximum enjoyment.
  • 1/2 cup Dried Cranberries Raisins can work as a suitable substitute.

  • 2 tablespoons Lime Juice Fresh lime juice is highly recommended.

Equipment

  • Mixing bowl
  • Small bowl
  • Spatula
  • whisk

Method

Directions
  1. Begin by washing and prepping the fruit. Core and chop the red apples into bite-sized pieces, slice the juicy pears, and peel the clementine oranges. For added color, slice the ripe kiwi into rounds.
  2. Once all the fruit is prepped, gently fold the chopped apples, pears, clementines, kiwi, dried cranberries, and pomegranate seeds together in a large bowl.
  3. In a separate small bowl, whisk together the maple syrup and freshly squeezed lime juice until fully combined.
  4. Once your dressing is prepared, pour it evenly over the assembled fruit in the mixing bowl and toss the fruit salad lightly to ensure even coating.
  5. Serve immediately in bowls, garnishing with extra pomegranate seeds or fresh mint leaves if desired.
