Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 finely chopped onion and sauté for about 5 minutes until translucent.
  2. Stir in 2 minced garlic cloves, cooking for another 1-2 minutes until aromatic, being careful not to brown.
  3. Add 1 cup of halved cherry tomatoes and a pinch of crushed red pepper flakes. Cook for 4-5 minutes until tomatoes soften.
  4. Gently stir in 2 cups of drained butter beans, mixing without mashing them.
  5. Pour in 1 cup of vegetable broth and bring to a simmer. Cook for about 5 minutes.
  6. Stir in ½ cup of heavy cream and ½ cup of grated Parmesan cheese, cooking for another 3-4 minutes until the sauce thickens.
  7. Season with salt and pepper as desired. Adjust the consistency with more broth if needed.
  8. Remove from heat and stir in chopped basil, parsley, lemon zest, and lemon juice.
  9. Serve warm, garnished with additional Parmesan cheese and fresh herbs.
