  1. In a large mixing bowl, add 2 cups of fresh diced pineapple, 1 medium cucumber thinly sliced, and ½ a finely sliced red onion. Gently stir with a wooden spoon.
  2. In a small bowl, whisk together 1 teaspoon of chili powder, the juice of 2 limes, 1 tablespoon of honey (or maple syrup), and a pinch of salt until smooth.
  3. Pour the zesty dressing over the fruit and vegetable mixture in the large bowl. Using a large spoon, gently toss everything together to ensure that all the ingredients are evenly coated in the dressing.
