Step-by-Step Instructions

  2. Cream together ½ cup of softened butter and 1 cup of granulated sugar until light and fluffy.
  3. Add 2 large eggs one at a time, then fold in 2 mashed ripe bananas and 1 cup of crushed pineapple.
  4. In another bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ¼ teaspoon of salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently.
  6. Fold in 1 cup of shredded coconut until evenly distributed.
