- Melt 2 tablespoons of butter in a skillet over medium heat. Add 2 cups of finely chopped cremini mushrooms, cover and cook for 5 minutes. Stir in 1 cup of onion, 1 finely chopped shallot, and a pinch of salt. Sauté for 5-10 minutes until soft, then add 1/2 cup of chopped red bell pepper, 3 minced garlic cloves, and 1/4 teaspoon of optional Cajun seasoning. Cook for another 5 minutes, then cool for 10 minutes.
- In a large bowl, combine the cooled vegetable mixture with 1 pound of ground turkey, 1/2 cup of finely crushed saltine crackers, 1/4 cup of milk, 1 large egg, 1 teaspoon of Dijon mustard, 1 teaspoon of ketchup, and 1 teaspoon of Worcestershire sauce. Mix gently until just combined.
- In a small bowl, mix together 1/2 cup of ketchup, 1 tablespoon of maple syrup, 1 teaspoon of Dijon mustard, and 1 teaspoon of Worcestershire sauce to prepare the glaze.
- Line a baking sheet with parchment paper and shape the meat mixture into a loaf. Place it on the sheet and spread the glaze over the top. Refrigerate while preheating the oven to 375°F (190°C).
- Bake the meatloaf for 45-55 minutes, checking for an internal temperature of 160°F. Let it rest for 10 minutes before slicing.
