- Preheat your oven to 400°F (205°C).
- Slice the bacon strips in half and bake on an oven-proof pan for about 13 minutes.
- Using a mandolin slicer, create very thin rounds of sweet potato, about 1/8 inch thick.
- In a large bowl, toss sweet potato slices with olive oil, garlic powder, onion powder, and chili powder.
- Take one half-strip of bacon, lay a sweet potato slice on top, and overlap 10 to 12 slices to form a rose shape. Place it in a greased muffin tin.
- Lower the oven temperature to 325°F (160°C) and bake for 40-45 minutes or until tender.
- Remove from the oven, allow to cool slightly, and transfer to a serving plate.
