Step-by-Step Instructions
  1. In a mixing bowl, combine brown sugar, soy sauce, minced garlic, grated ginger, lime juice, and olive oil to create a flavorful marinade. Add your chicken and ensure fully coated. Marinate for at least 30 minutes, up to 2 hours.
  2. Preheat your grill to medium heat, oven to 375°F (190°C), or slow cooker to low.
  3. Cook the chicken according to your method: Grill for 6-7 minutes per side, bake for 25-30 minutes until juices run clear, or slow cook on low for 4-6 hours or high for 2-3 hours.
  4. In a saucepan, pour the remaining marinade and bring to a boil. Simmer for 5-7 minutes until thickened slightly.
  5. Taste and adjust the sauce with more lime juice or soy sauce as needed. Optionally, add chili flakes for heat.
  6. Drizzle the thickened sauce over the cooked chicken and garnish with chopped cilantro. Serve with steamed rice or salad.
