Step-by-Step Instructions
- Start by slicing one large onion and placing it evenly at the bottom of your slow cooker. Set your slow cooker to low.
- Season a 3-pound beef roast generously with salt and black pepper. Lay it on top of the onions.
- Pour enough beef broth into the slow cooker until it covers about half of the roast. Add Worcestershire sauce and soy sauce.
- Sprinkle garlic powder, onion powder, and dried thyme evenly over the beef.
- Cover the slow cooker and set it to cook on LOW for 8 hours or HIGH for 4 to 5 hours.
- Once cooked, carefully remove the beef roast and let it rest on a cutting board for 10 minutes. Shred the beef into bite-sized pieces.
- Strain the broth through a fine mesh sieve, then return it to the slow cooker.
- Mix cornstarch with cold water and stir into the broth. Cook on HIGH for an additional 10-15 minutes until thickened.
- Layer slices of bread on plates, add mashed potatoes, pile on the shredded beef, and drizzle with gravy. Enjoy!
