Step-by-Step Instructions
  1. Start by slicing one large onion and placing it evenly at the bottom of your slow cooker. Set your slow cooker to low.
  2. Season a 3-pound beef roast generously with salt and black pepper. Lay it on top of the onions.
  3. Pour enough beef broth into the slow cooker until it covers about half of the roast. Add Worcestershire sauce and soy sauce.
  4. Sprinkle garlic powder, onion powder, and dried thyme evenly over the beef.
  5. Cover the slow cooker and set it to cook on LOW for 8 hours or HIGH for 4 to 5 hours.
  6. Once cooked, carefully remove the beef roast and let it rest on a cutting board for 10 minutes. Shred the beef into bite-sized pieces.
  7. Strain the broth through a fine mesh sieve, then return it to the slow cooker.
  8. Mix cornstarch with cold water and stir into the broth. Cook on HIGH for an additional 10-15 minutes until thickened.
  9. Layer slices of bread on plates, add mashed potatoes, pile on the shredded beef, and drizzle with gravy. Enjoy!
