Preparation Steps
- Preheat your oven to 375ºF (190ºC).
- Combine chopped zucchini, bell pepper, onion, and grape tomatoes in a baking dish.
- Sprinkle Italian herb blend and garlic powder over the vegetables, then mix in half of the mozzarella cheese.
- Season with salt and cracked black pepper, and drizzle with olive oil, then mix well.
- Bake uncovered for 20 minutes.
- Add remaining mozzarella cheese over the top and return to the oven.
- Continue baking for an additional 10 minutes until cheese is melted and golden brown.
- Remove from oven and garnish with chopped parsley and red chili flakes.
