For the Zucchini Mix
  • 2 medium Zucchini
  • 1 medium Green Bell Pepper or red bell pepper
  • 1 medium Onion yellow or sweet
  • 1 cup Grape Tomatoes halved
For Seasoning and Flavor
  • 1 tablespoon Italian Herb Blend fresh herbs elevate flavor
  • 1 teaspoon Garlic Powder or fresh garlic
  • to taste Salt
  • to taste Cracked Black Pepper
For the Cheese Topping
  • 2 cups Mozzarella Cheese or cheddar
  • 2 tablespoons Olive Oil or melted butter

Method
 

Preparation Steps
  1. Preheat your oven to 375ºF (190ºC).
  2. Combine chopped zucchini, bell pepper, onion, and grape tomatoes in a baking dish.
  3. Sprinkle Italian herb blend and garlic powder over the vegetables, then mix in half of the mozzarella cheese.
  4. Season with salt and cracked black pepper, and drizzle with olive oil, then mix well.
  5. Bake uncovered for 20 minutes.
  6. Add remaining mozzarella cheese over the top and return to the oven.
  7. Continue baking for an additional 10 minutes until cheese is melted and golden brown.
  8. Remove from oven and garnish with chopped parsley and red chili flakes.
