For the Beef Mixture
  • 1 lb Ground Beef Turkey can be used for a healthier option.
  • ½ unit Onion Yellow or red work beautifully.
  • 1 tsp Cilantro Stems Fresh parsley can serve as a substitute.
  • ¼ cup Tomato Paste Pureed sun-dried tomatoes can also be used.
  • 1 tsp Chili Powder Adjust for your desired spice level.
  • 1 tsp Oregano Mexican oregano is ideal, but regular works too.
  • 1 tsp Salt Customize measurements according to taste.
For the Tacos
  • 6-8 unit Tortillas Choose corn or flour depending on preference.
  • 1 tbsp Olive Oil Avocado oil is a great high-heat alternative.
  • 1 cup Cheese Grated; Colby Jack recommended.
For the Avocado Lime Crema
  • 1 unit Avocado Substitute with guacamole or omit for a lighter option.
  • 1 unit Lime Lemon can be used but may slightly alter the flavor.
  • ¼ cup Sour Cream or Greek Yogurt Dairy-free yogurt is a great substitute.
  • ¼ cup Torn Cilantro Green onions can be used instead.
  • 1 unit Jalapeno Optional; leave it out for a milder taste.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large skillet, cook ground beef with chopped onion, cilantro stems, and tomato paste for 6-8 minutes until browned. Stir in chili powder, oregano, salt, and other spices.
  3. Brush tortillas lightly with olive oil, arranging them on the baking sheet.
  4. Fill each tortilla with the beef mixture and sprinkle with cheese; fold to create taco shape.
  5. Bake for about 15 minutes until tortillas are golden brown and cheese is melted.
  6. While baking, blend avocado, sour cream, lime juice, torn cilantro, and salt in a blender until smooth.
  7. Serve hot, garnishing with cilantro and lime wedges, and drizzle with the avocado lime crema.
