Step-by-Step Instructions for Tender Chicken Fricassée with Shallots
  1. Rinse the chicken thighs under cold water and pat dry. Season generously with salt and pepper, then let sit for 15 minutes.
  2. Heat a large skillet over medium-high heat, add chopped bacon, and cook until crispy. Remove and set aside.
  3. In the same skillet, add unsalted butter. Sear the chicken thighs skin-side down for 8-10 minutes until golden brown. Flip chicken and cook for another 6-7 minutes. Transfer to a plate and cover.
  4. Lower heat and add more butter. Sauté shallots and garlic for about 10 minutes until tender and caramelized.
  5. Return chicken to the skillet, pour in wine to deglaze the pan, sprinkle bacon on top, and add thyme.
  6. Preheat oven to 350°F (175°C). Bake skillet uncovered for about 30 minutes.
