  • 1 cup Breadcrumbs use panko for extra crunch
  • 1 large Onion shredded or chopped

  • 1 cup Chicken Broth low sodium or vegetable broth
  • 1/2 cup Ketchup can substitute with tomato sauce
  • 2 tablespoons Tomato Paste optional
  • 1/4 cup Pineapple Juice fresh or canned
  • 1 tablespoon Cornstarch or arrowroot powder
For the Vegetables
  • 1 tablespoon Vegetable Oil or olive oil for healthier option
  • 2 cloves Garlic minced
  • 1 cup Bell Peppers red and green, diced
  • 1/2 cup Pineapple Chunks fresh or canned

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (or air fryer at 380°F) to cook the meatballs.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, onion, garlic powder, salt, and pepper. Mix gently and form into meatballs.
  3. Bake meatballs for 20-25 minutes in the oven or air fry for about 10 minutes until golden brown and internal temperature reaches 160°F.
  4. In a bowl, whisk together rice vinegar, brown sugar, chicken broth, ketchup, tomato paste, pineapple juice, and cornstarch to make the sauce.
  5. Heat vegetable oil in a skillet, sauté diced onion and bell peppers for one minute. Add minced garlic and cook for another 30 seconds.
  6. Pour the sauce into the skillet with veggies and cook until thickened, about 3-5 minutes.
  7. Add cooked meatballs and pineapple chunks to the skillet, gently tossing everything in the sauce for another 2 minutes.
  8. Serve hot over rice or noodles, or as an appetizer.
