  1. In a mixing bowl, whisk together olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, ground turmeric, ground cinnamon, salt, black pepper, and fresh lemon juice. Coat the chicken thighs thoroughly with this aromatic marinade. Allow to marinate for at least 15 minutes.
  2. Slice the red onion into thin rings and layer them evenly on the bottom of your slow cooker. Place the marinated chicken thighs on top.
  3. Secure the lid on your slow cooker and set it to low. Cook for about 4 hours, or until the chicken is tender.
