  • 2 tablespoons olive oil extra virgin for enhanced flavor
  • 1 medium red onion sliced
  • 2 cloves garlic minced
  • 1 medium zucchini sliced into rounds
  • 1 medium eggplant fresh and firm
  • 1 medium red bell pepper chopped
  • 1 medium yellow bell pepper chopped
  • 1 cup cherry tomatoes halved
For the Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste salt
  • to taste pepper
For the Drizzle
  • 1 tablespoon balsamic vinegar can substitute with red wine vinegar
  • 1/4 cup fresh parsley chopped

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet over medium heat for 1-2 minutes.
  2. Add sliced red onion and sauté for about 2 minutes until softened and golden.
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Combine chopped vegetables and cook for 5-7 minutes until slightly charred.
  5. Add halved cherry tomatoes and dried herbs, cooking for another 5 minutes.
  6. Season with salt and pepper, cooking for another minute or two.
  7. Drizzle balsamic vinegar over the vegetables and stir.
  8. Garnish with fresh parsley before serving.
