  • 1 tablespoon Olive Oil for sautéing
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 cups Spinach fresh
  • 1 pound Ground Chicken or turkey
  • 1 cup Breadcrumbs gluten-free if needed
  • 1/2 cup Greek Yogurt or sour cream
  • 1 tablespoon Dill fresh
  • 2 tablespoons Lemon Juice fresh
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • salt to taste Salt
  • pepper to taste Pepper

Method
 

Cooking Instructions
  1. Heat olive oil in a skillet over medium heat. Sauté onion until translucent, then add garlic for another 30 seconds.
  2. In a bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix well.
  3. Shape the mixture into uniform patties, about ½ inch thick.
  4. Cook the patties in the skillet over medium-high heat, about 5-6 minutes on each side until golden brown.
  5. Transfer cooked patties to a plate lined with paper towels. Let rest and serve warm.
