  • 2 tablespoons Fresh Rosemary chopped
  • 2 teaspoons Dried Thyme
  • 2 tablespoons Olive Oil or melted butter
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper freshly cracked
For the Glaze
  • 1 cup Apple Cider or pure apple juice
  • 1/4 cup Honey or maple syrup
  • 2 tablespoons Dijon Mustard
For Serving
  • 1/4 cup Fresh Herbs parsley or extra rosemary for garnish
  • 1 cup Seasonal Fruits sliced apples or cranberries

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Pat the pork loin dry with paper towels and place it in a roasting pan. In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper, then rub over the pork.
  2. Transfer the pork roast to the oven and cook for about 1 hour, or until the internal temperature reaches 145°F (63°C).
  3. While the roast cooks, prepare the glaze by mixing apple cider, honey, and mustard in a saucepan. Simmer for 5-7 minutes until slightly thickened.
  4. Once the pork reaches 145°F, brush the glaze over it and roast for another 15-20 minutes until the glaze caramelizes.
  5. Let the pork rest for 10-15 minutes before slicing. Prepare your serving platter and fresh herbs.
  6. Slice the pork and garnish with herbs and seasonal fruits before serving.
