- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground turkey and sprinkle in all the spices. Cook for 5-7 minutes until browned and cooked through.
- Add diced onions and chopped bell peppers to the skillet with the cooked turkey. Sauté for 3-4 minutes until softened.
- Stir in cubed sweet potatoes and fresh spinach. Cook for an additional 3-4 minutes until spinach wilts and flavors meld.
- Transfer the mixture to the prepared baking dish, spreading it evenly. Drizzle chicken broth over the top.
- Cover the dish with aluminum foil and bake for 20 minutes.
- After 20 minutes, remove the foil and sprinkle shredded mozzarella cheese over the top. Return to the oven uncovered for an additional 10-15 minutes until cheese is bubbly and golden.
