Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground turkey and sprinkle in all the spices. Cook for 5-7 minutes until browned and cooked through.
  3. Add diced onions and chopped bell peppers to the skillet with the cooked turkey. Sauté for 3-4 minutes until softened.
  4. Stir in cubed sweet potatoes and fresh spinach. Cook for an additional 3-4 minutes until spinach wilts and flavors meld.
  5. Transfer the mixture to the prepared baking dish, spreading it evenly. Drizzle chicken broth over the top.
  6. Cover the dish with aluminum foil and bake for 20 minutes.
  7. After 20 minutes, remove the foil and sprinkle shredded mozzarella cheese over the top. Return to the oven uncovered for an additional 10-15 minutes until cheese is bubbly and golden.
  8. Once baked, let the dish cool for a few minutes before serving it warm.
