Preparation Steps
- Season the boneless skinless chicken breasts with salt and pepper on both sides. Let sit for about 5 minutes.
- Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6-7 minutes on each side until cooked through.
- Slice avocado, cheese, red onion, and tomato into even pieces.
- Spread mayonnaise and Dijon mustard on each slice of bread. On half, layer the chicken, avocado, cheese, red onion, and tomato.
- Cover with remaining bread, mayo side down. Press down slightly.
- Grill the sandwiches in a skillet over medium heat for 3-4 minutes on each side until golden brown.
- Slice in half diagonally and serve warm.
