Method
 

Preparation Steps
  1. Season the boneless skinless chicken breasts with salt and pepper on both sides. Let sit for about 5 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6-7 minutes on each side until cooked through.
  3. Slice avocado, cheese, red onion, and tomato into even pieces.
  4. Spread mayonnaise and Dijon mustard on each slice of bread. On half, layer the chicken, avocado, cheese, red onion, and tomato.
  5. Cover with remaining bread, mayo side down. Press down slightly.
  6. Grill the sandwiches in a skillet over medium heat for 3-4 minutes on each side until golden brown.
  7. Slice in half diagonally and serve warm.
