- Preheat your oven to 400°F (200°C).
- Chop the sweet potato (or potatoes) and peeled carrots into 3/4-inch to 1-inch pieces.
- Place the chopped vegetables in a large baking dish.
- Add minced garlic, olive oil, maple syrup, thyme, rosemary, cinnamon, and salt to the baking dish.
- Toss the mixture thoroughly until all the vegetables are evenly coated.
