  • 4 fillets Salmon opt for high-quality, wild-caught
  • 1 tablespoon Olive Oil for greasing

For the Pineapple Glaze
  • 1 cup Pineapple fresh or canned, diced and well-drained
  • 1/4 cup Light Brown Sugar
  • 1/4 cup Soy Sauce gluten-free if needed
  • 2 tablespoons Rice Vinegar can substitute with apple cider or white wine vinegar
  • 2 cloves Minced Garlic
  • 1 teaspoon Grated Fresh Ginger optional
For Garnish
  • to taste Fresh Parsley for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a bowl, whisk together the light brown sugar, soy sauce, rice vinegar, minced garlic, and grated fresh ginger until smooth.
  3. Pat the salmon fillets dry, rub with olive oil, and season with salt and black pepper.
  4. Place the salmon skin-side down in the baking dish with space between each piece.
  5. Pour two-thirds of the glaze over the salmon and scatter pineapple chunks around it.
  6. Bake for 12-15 minutes or until the salmon flakes easily with a fork.
  7. Broil for 1-2 minutes for caramelization, watching closely to prevent burning.
  8. Let the salmon rest for 5 minutes and garnish with parsley before serving.
