Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- In a large bowl, mix the mashed bananas, Greek yogurt, honey or maple syrup, melted coconut oil, vanilla extract, and egg until smooth.
- In another bowl, whisk together whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
- Add the dry ingredients to the wet mixture and stir gently until just combined.
- Fold in any optional add-ins like chocolate chips or nuts.
- Fill each muffin cup about two-thirds full with the batter.
- Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool in the muffin tin for 5 minutes before transferring to a wire rack.
