- Begin by breaking the Oreos into uneven small pieces and place them into a large mixing bowl.
- Melt the white chocolate morsels in a microwave-safe bowl, heating in 30-second intervals, stirring in between until completely smooth.
- Stir in the mint extract and a few drops of green food coloring into the melted chocolate. Gently fold in the broken Oreos.
- Pour the mixture onto a lined baking sheet, spreading it evenly to about half an inch thick.
- Place the baking sheet in the freezer and chill for about 2 hours or until firm.
- Remove from the freezer, lift the wax paper, and break the Mint Oreo Bark into pieces.
