Step-by-Step Instructions for Mini Meatloaf
  1. Preheat your oven to 350°F (175°C) and coat a muffin tin with nonstick cooking spray.
  2. In a large mixing bowl, combine the ground beef, onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and ½ cup of ketchup. Mix until combined.
  3. Scoop the meatloaf mixture into the muffin tin, filling each cup to about three-quarters full.
  4. In a separate bowl, mix together the remaining ¼ cup of ketchup, brown sugar, and mustard. Spoon this glaze over each filled muffin cup.
  5. Bake for 30 minutes, or until cooked through and the internal temperature reaches 160°F (70°C).
