- Preheat your oven to 400°F (200°C).
- Dice the red bell pepper, slice the red onion, mince the garlic, and halve the tomatoes.
- In a small bowl, combine the oregano, thyme, salt, black pepper, and red pepper flakes.
- Divide the prepared vegetables and the block of feta cheese into your oven-safe dish.
- Drizzle the assembled vegetables and feta with olive oil and sprinkle your spice mix over the top.
- Place the baking dish in the preheated oven and bake for 25 minutes.
- After 25 minutes, remove the dish from the oven and gently stir in the spinach.
- Carefully crack the eggs into the wells created in the spinach and vegetable mixture.
- Return the dish to the oven and bake for an additional 8–10 minutes.
- Let your dish rest for 2 minutes before garnishing with fresh basil and serving hot.
