  • 1 teaspoon Oregano fresh or dried
  • 1 teaspoon Thyme dried
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper
For Topping and Garnish
  • 1 teaspoon Red Pepper Flakes adjust for spice preference
  • 1 teaspoon Lemon Zest
  • 4 whole Eggs room temperature
  • 1 tablespoon Fresh Basil optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Dice the red bell pepper, slice the red onion, mince the garlic, and halve the tomatoes.
  3. In a small bowl, combine the oregano, thyme, salt, black pepper, and red pepper flakes.
  4. Divide the prepared vegetables and the block of feta cheese into your oven-safe dish.
  5. Drizzle the assembled vegetables and feta with olive oil and sprinkle your spice mix over the top.
  6. Place the baking dish in the preheated oven and bake for 25 minutes.
  7. After 25 minutes, remove the dish from the oven and gently stir in the spinach.
  8. Carefully crack the eggs into the wells created in the spinach and vegetable mixture.
  9. Return the dish to the oven and bake for an additional 8–10 minutes.
  10. Let your dish rest for 2 minutes before garnishing with fresh basil and serving hot.
