- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels and set them aside.
- In a medium-sized bowl, combine all-purpose flour, ground coriander, paprika, ground cumin, salt, black pepper, and optional red pepper flakes. Stir until well mixed.
- In another bowl, whisk together lemon juice, olive oil, and melted butter. Add minced garlic.
- Dredge each cod fillet in the lemon-garlic mixture, then transfer to the flour mixture, pressing gently.
- Heat a tablespoon of olive oil in a large skillet over medium-high heat. Sear the cod fillets for about 2 minutes per side until golden brown.
- Pour any remaining lemon-garlic sauce over the cod fillets and transfer the skillet to the preheated oven. Bake for 8-10 minutes.
- Remove from oven and let cod rest for a minute. Garnish with fresh parsley and serve.
