Method
 

Step-By-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels and set them aside.
  3. In a medium-sized bowl, combine all-purpose flour, ground coriander, paprika, ground cumin, salt, black pepper, and optional red pepper flakes. Stir until well mixed.
  4. In another bowl, whisk together lemon juice, olive oil, and melted butter. Add minced garlic.
  5. Dredge each cod fillet in the lemon-garlic mixture, then transfer to the flour mixture, pressing gently.
  6. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Sear the cod fillets for about 2 minutes per side until golden brown.
  7. Pour any remaining lemon-garlic sauce over the cod fillets and transfer the skillet to the preheated oven. Bake for 8-10 minutes.
  8. Remove from oven and let cod rest for a minute. Garnish with fresh parsley and serve.
