Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400℉ (200℃). Gather your roasting pan and drizzle olive oil in the bottom.
  2. In the roasting pan, place the onions, carrots, celery, and garlic. Nestle the turkey wings and sprinkle with salt and pepper. Roast for 1 hour.
  3. Remove the pan from the oven, pour in the wine to deglaze, and scrape the bottom. Add turkey stock and roast for an additional 45 minutes.
  4. Let the pan cool slightly, remove the turkey wings, and strain the liquid into a bowl.
  5. Melt unsalted butter in a saucepan over medium heat. Whisk in the Wondra flour to create a roux.
  6. Slowly add the warm broth to the roux while whisking until the gravy thickens to desired consistency.
  7. Allow the gravy to cool briefly before storing in an airtight container or serving.
