Step-by-Step Instructions for Lime Sorbet
  1. In a medium saucepan, combine equal parts water and granulated sugar over medium heat. Stir continuously for about 3-4 minutes, until sugar completely dissolves and mixture begins to simmer.
  2. Once the sugar syrup has cooled, add freshly squeezed lime juice and lime zest to the mixture, stirring thoroughly to combine. If using light corn syrup, pour that in now as well.
  3. Pour the vibrant lime mixture into a shallow, freezer-safe container. Spread it evenly, ensuring there are no bubbles or gaps.
  4. Place the container in the freezer and allow it to freeze for about 3-4 hours. Stir every 30 minutes using a fork to break up any developing ice crystals.
  5. After about 3-4 hours, check your Lime Sorbet for texture. If too icy, blend briefly then return it to the freezer.
  6. When the sorbet has reached a fluffy, scoopable consistency, remove it from the freezer and serve in chilled bowls or glasses.
