Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with nonstick spray, optionally lining with parchment paper.
  2. In a large mixing bowl, peel and mash 3 extra ripe bananas with a fork until smooth and creamy.
  3. Add 1 cup of white granulated sugar, 2 large room temperature eggs, 1 teaspoon of vanilla extract, and 1/3 cup of canola oil to the mashed bananas. Stir until combined.
  4. Sift in 1 1/3 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt into the wet mixture. Fold until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 40-45 minutes, until a toothpick inserted in the center comes out clean.
