For the Dipping Sauce
  • 8 oz Cream cheese Can substitute with yogurt or whipped cream

Method
 

Preparation
  1. Soak the pineapple rings in a bowl with dark rum and coconut rum for at least 1 hour. Drain and pat dry.
  2. Set up three bowls with flour, whisked eggs mixed with coconut milk, and coconut flakes. Preheat oil to 350°F (175°C).
  3. Dredge each pineapple ring in flour, dip into egg mixture, and coat with coconut flakes. Repeat for all rings.
  4. Fry coated pineapple rings in hot oil for about 1 minute on each side until golden brown. Drain on paper towels.
  5. Mix softened cream cheese and powdered sugar in a bowl, then stir in reserved rum until smooth for dipping sauce.
  6. Serve the warm pineapple rings immediately with the dipping sauce.
