Step-by-Step Instructions for Chocolate Cherry Cookies
  1. In a medium bowl, whisk together flour, cocoa powder, baking powder, and sea salt until well combined.
  2. In a large mixing bowl, beat together softened butter, light brown sugar, and granulated sugar until light and fluffy for 2-3 minutes.
  3. Add egg yolks and vanilla extract to the mixture and mix until fully incorporated.
  4. Gradually blend the flour mixture into the wet ingredients until just combined.
  5. Portion the dough into 32 balls, create an indent in each, and chill in the refrigerator for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and bake cookies for 9-11 minutes, gently pressing indents again after baking.
  7. Prepare the ganache by heating heavy cream and pouring it over chopped chocolate; stir until smooth and mix in cherry preserves.
  8. After cookies cool, fill each indent with ganache and allow to set in the refrigerator for 10-15 minutes.
