Step-by-Step Instructions
  1. Brown the butter in a saucepan until deep amber, about 5–7 minutes. Let cool.
  2. Preheat oven to 175°C (350°F). Grease and line three 20-cm cake pans.
  3. Whisk together dry ingredients: cake flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  4. Combine cooled browned butter with dry ingredients until resembles coarse crumbs.
  5. Mix wet ingredients: buttermilk, eggs, and vanilla extract in another bowl.
  6. Gradually pour wet mixture into dry mixture. Fold in chopped pecans.
  7. Divide batter among pans and bake for about 30 minutes. Check with a toothpick.
  8. Cool in pans for 15-20 minutes, then invert onto wire racks.
  9. Prepare frosting by beating cream cheese and butter, then adding sugar and adjusting with heavy cream.
  10. Assemble by layering cake and frosting. Chill for 30-60 minutes before serving.
