Prepare the Bang Bang Chicken
- In a small bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Whisk together until smooth and set aside.
- In a medium bowl, whisk together buttermilk, all-purpose flour, cornstarch, egg, Sriracha, garlic powder, salt, black pepper, and optional cayenne. Add the chicken and marinate for about 10 minutes.
- Dredge marinated chicken in panko breadcrumbs and place on a plate.
- Heat canola oil in a large skillet over medium heat. Fry chicken tenders for 2-3 minutes on each side until golden brown.
- Transfer fried chicken to paper towels to drain excess oil, then toss with prepared Bang Bang Sauce.
- Garnish with chopped parsley before serving.
