Prepare the Pie Crust
- Preheat your oven to 400°F (200°C). Mix flour and vegan butter until crumbly, add cold water to form dough. Roll out and fit into the pie pan, prick with a fork, and pre-bake for 10 minutes.
Make the Filling
- Core and slice the Honeycrisp apples. Mix with brown sugar, cinnamon, and lemon juice. Drizzle half the salted caramel and mix well.
Assemble the Pie
- Pour the apple mixture into the cooled pie crust and drizzle the remaining salted caramel. Seal the edges and optionally cover with a lattice crust.
Bake the Pie
- Bake for 25-30 minutes at 400°F (200°C) until golden brown and the filling is bubbly. Cover edges with foil if they brown too quickly.
Cool the Pie
- Remove from oven and cool on a wire rack for at least 2 hours before slicing.
