- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine olive oil, honey, lemon juice, ground cinnamon, nutmeg, salt, and pepper. Whisk until smooth.
- Add the sliced carrots and trimmed green beans to the bowl. Toss until coated with the glaze.
- Spread the glazed vegetables in a single layer on a parchment-lined baking sheet. Roast for 20 to 25 minutes.
- Halfway through cooking, stir the vegetables for even browning.
- Remove from oven, transfer to a serving dish, and garnish with fresh parsley.
