Ingredients
  

For the Batter
  • 1 cup butter room temperature
  • 2 cups sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour or gluten-free flour
  • 1 tablespoon baking powder ensure it's fresh
  • 1 teaspoon salt optional
  • 1 cup milk or plant-based milk
For the Cinnamon Swirl
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar or white sugar
Optional Topping
  • optional vanilla glaze add a splash of maple syrup if desired

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 10-inch bundt pan with butter or non-stick spray.
  2. In a small bowl, mix 1 tablespoon of ground cinnamon with 1/2 cup of brown sugar. Set aside.
Cake Assembly
  1. In a large bowl, cream together 1 cup of butter and 2 cups of sugar until light and fluffy.
  2. Add 4 eggs one at a time, then stir in 1 tablespoon of vanilla extract.
  3. In another bowl, whisk together 3 cups of flour, 1 tablespoon of baking powder, and 1 teaspoon of salt. Gradually mix in alternating with 1 cup of milk.
  4. Pour half of the batter into the bundt pan, sprinkle with half of the cinnamon-sugar mixture, and then top with remaining batter. Swirl the batter gently to create patterns.
Baking
  1. Bake for 50-60 minutes, checking doneness with a toothpick.
  2. Allow to cool for 10-12 minutes before inverting onto a wire rack.
