Ingredients
  

For the Casserole Base
  • 3 cups Crushed Tortilla Chips try Dorito Nacho Cheese chips for extra flavor
  • 1 can Black Beans rinsed and drained
  • 3 cups Cooked Chicken preferably rotisserie
  • 1 teaspoon Ground Cumin adjust to taste
  • 1 can Cream of Chicken Soup do not add water or milk
  • 1 can Rotel Tomatoes can substitute with diced tomatoes and green chilies
  • 1 cup Shredded Jack Cheese can substitute with mozzarella
  • 1 cup Shredded Cheddar Cheese use medium or sharp for best flavor
  • 1 cup Diced Tomato any tomatoes on hand will do
  • 1/4 cup Cilantro omit if undesired
  • 1 medium Jalapeños optional, adjust for heat
  • 1 can Diced Green Chiles leave out for milder dish

Method
 

Step-By-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients while the oven warms up.
  2. In a large mixing bowl, combine black beans, cooked chicken, ground cumin, cream of chicken soup, Rotel tomatoes, shredded Jack cheese, half of the shredded cheddar cheese, diced tomato, and half of the chopped cilantro. Mix thoroughly for about 2-3 minutes.
  3. Spread half of the crushed tortilla chips evenly across the bottom of a 9x13-inch baking dish.
  4. Pour the chicken mixture over the tortilla chips and spread evenly with a spatula.
  5. Sprinkle the remaining crushed tortilla chips over the chicken mixture.
  6. Generously sprinkle the remaining shredded cheddar cheese on top of the chips.
  7. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown.
  8. Let the casserole sit for about 5 minutes before garnishing with the remaining cilantro and jalapeños.
