  • 1 can Chickpeas Rinsed and drained.
  • 1 cup Cooked Quinoa Feel free to swap in rice or farro.
  • 1 cup Shredded Cheese Cheddar or vegan cheese recommended.
  • 1 cup Vegetable Broth Broth is recommended for best results.
  • 1 medium Diced Onion Leeks or shallots can be used.
  • 2 cloves Garlic Minced, fresh garlic preferred.
  • 2 tablespoons Olive Oil Any cooking oil can be used.
  • to taste Salt

  • 1/2 cup Breadcrumbs Use gluten-free breadcrumbs for a certified gluten-free dish.
  • 1/4 cup Fresh Herbs Chopped parsley or basil recommended.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Rinse and drain the chickpeas, chop the broccoli into small florets, and finely dice the onion. Mince the garlic.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sauté for 3-4 minutes until translucent and fragrant.
  4. Stir in the broccoli florets and cook for an additional 4-5 minutes until tender but vibrant green.
  5. In a large mixing bowl, combine the sautéed vegetables with the rinsed chickpeas, cooked quinoa, shredded cheese, vegetable broth, salt, black pepper, and paprika. Mix thoroughly.
  6. Lightly grease a baking dish with olive oil. Pour the casserole mixture into the dish, spreading it evenly.
  7. Place the baking dish in the preheated oven and bake for 25-30 minutes until the cheese is bubbling and golden brown.
  8. Remove the casserole from the oven and let it cool for about 5 minutes. Garnish with fresh herbs before serving.
