Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat about 1 tablespoon of olive oil over medium heat. Add the ground turkey with salt, pepper, paprika, and thyme. Sauté for 5–7 minutes until browned.
  3. Add diced onion and bell pepper to the skillet. Sauté for about 5 minutes until softened.
  4. Stir in fresh spinach or kale, cooking for an additional 2–3 minutes until wilted.
  5. Combine cooked turkey and vegetable mixture with cubed sweet potatoes in a large mixing bowl, folding gently to mix.
  6. Transfer the mixture to a greased 9x13-inch baking dish, smoothing the top.
  7. Sprinkle shredded cheddar and mozzarella over the top evenly.
  8. Bake for 25–30 minutes until cheese is bubbly and golden brown.
  9. Remove from the oven and let sit for 5 minutes before serving.
