Ingredients
  

For the Meatballs
  • 1 lb Ground Beef can substitute with lamb, turkey, or chicken
  • 3 cloves Garlic minced
  • 2 medium Onions finely chopped
  • 2 tbsp Breadcrumbs gluten-free options available
  • 1 tsp Baking Soda ensures tender meatballs
  • 1 cup Fresh Herbs parsley, mint, coriander
  • 3 tbsp Olive Oil added to meatballs
  • 1 tsp Salt
  • to taste Black Pepper
For the Roasted Potatoes
  • 6 medium Potatoes can use sweet potatoes
  • 0.5 tsp Cumin
  • 0.5 tsp Paprika
  • 0.5 tsp Oregano
For the Tzatziki Sauce
  • 1 cup Greek Yogurt can use low-fat
  • 0.5 Cucumber grated, excess moisture squeezed out
  • 1 tbsp Lemon Juice freshly squeezed
  • 0.3 cup Fresh Dill or Mint depends on preference
For the Salad
  • 2 cups Lettuce chopped
  • Other Salad Veggies tomatoes, cucumbers, red onion
  • 0.5 cup Kalamata Olives can substitute or omit

Preparation Steps
  1. In a large bowl, combine ground beef, minced garlic, and finely chopped onions. Add breadcrumbs, baking soda, chopped fresh herbs, olive oil, salt, and pepper. Mix until well incorporated, cover the bowl with plastic wrap, and refrigerate for at least 2 hours.
  2. Preheat your oven to 425°F (220°C). Once the meatball mixture is ready, shape it into small, evenly sized balls and arrange them on a baking tray lined with parchment paper. Bake for 30 to 40 minutes until cooked through and golden brown.
  3. While the meatballs are baking, prepare the potatoes by cutting them into wedges. Toss them in a large bowl with olive oil and your seasoning mix of cumin, paprika, and oregano. Spread the potatoes on a baking tray in a single layer and roast for 40 to 60 minutes, flipping halfway through.
  4. In a medium bowl, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and fresh herbs. Mix well and season with salt. Chill in the refrigerator.
  5. Assemble your Greek Meatball Bowl with a base of chopped lettuce, layer with salad veggies, followed by the roasted potatoes and meatballs. Top with tzatziki sauce and garnish with extra herbs.
