Method
 

Preparation Instructions
  1. In a medium bowl, combine olive oil, lime juice, lime zest, brown sugar, chili powder, chipotle chili powder, salt, ground cumin, smoked paprika, onion powder, and garlic powder. Whisk until well blended.
  2. Take the chicken breasts and coat them evenly with the wet rub. Marinate for at least 30 minutes.
  3. Preheat grill or skillet to medium heat and cook the chicken for 5-7 minutes per side until cooked through.
  4. Let the chicken rest for 5 minutes on a cutting board.
  5. In a mixing bowl, combine chopped avocados, cherry tomatoes, corn, red onion, red bell pepper, jalapeño, and cilantro. Add lime juice and season to taste.
  6. Slice the chicken, serve with avocado corn salsa on top or on the side.
