- In a medium bowl, combine olive oil, lime juice, lime zest, brown sugar, chili powder, chipotle chili powder, salt, ground cumin, smoked paprika, onion powder, and garlic powder. Whisk until well blended.
- Take the chicken breasts and coat them evenly with the wet rub. Marinate for at least 30 minutes.
- Preheat grill or skillet to medium heat and cook the chicken for 5-7 minutes per side until cooked through.
- Let the chicken rest for 5 minutes on a cutting board.
- In a mixing bowl, combine chopped avocados, cherry tomatoes, corn, red onion, red bell pepper, jalapeño, and cilantro. Add lime juice and season to taste.
- Slice the chicken, serve with avocado corn salsa on top or on the side.
