- Coarsely chop the big red bell pepper, bird’s eye chilies, yellow onion, and garlic.
- Blend the chopped ingredients with about 2 cups of water until finely chopped but chunky.
- Transfer the mixture to a saucepan, add sugar, salt, and vinegar, then heat and stir until the sugar melts.
- Dissolve potato starch in water, add it to the sauce, and stir continuously for 2–3 minutes to thicken.
