Step-by-Step Instructions for Sweet Chili Sauce
  1. Coarsely chop the big red bell pepper, bird’s eye chilies, yellow onion, and garlic.
  2. Blend the chopped ingredients with about 2 cups of water until finely chopped but chunky.
  3. Transfer the mixture to a saucepan, add sugar, salt, and vinegar, then heat and stir until the sugar melts.
  4. Dissolve potato starch in water, add it to the sauce, and stir continuously for 2–3 minutes to thicken.
  5. Remove from heat and let the sauce cool at room temperature before transferring to a jar.
