Ingredients

For the Filling
  • 1 pound lean ground beef A flavorful protein base that lends richness to your enchiladas; swap with ground turkey for a lighter option.
  • 1 cup chunky salsa It adds moisture and depth; consider using homemade salsa or mild tomato sauce if you prefer less spice.
For the Assembling
  • 8 (8-inch) tortillas The perfect vessel for your filling; flour tortillas offer the best texture, but corn tortillas are a delightful classic choice.
For the Sauce and Topping
  • 1 (10-ounce) red enchilada sauce Enhances flavor and keeps everything moist; green enchilada sauce can give a unique twist!
  • 1 (8-ounce) Borden® Cheese Thick Cut Shredded Four Cheese Mexican Provides a gooey, cheesy topping that's hard to resist; use your favorite cheese blend if you're out of this one.

Step-by-Step Instructions for Beef Enchiladas
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, over medium heat, add 1 pound of lean ground beef. Cook the beef thoroughly for about 6-8 minutes.
  3. Pour in 1 cup of chunky salsa into the cooked beef mixture and stir well. Continue cooking for an additional 2-3 minutes.
  4. Place 8 (8-inch) tortillas on a microwave-safe plate and cover with a damp paper towel, microwaving for 10-15 seconds.
  5. On each tortilla, place a generous amount of the beef and salsa mixture, followed by a sprinkle of cheese. Roll tightly and place seam-side down in your baking dish.
  6. Pour the can of red enchilada sauce evenly over the top of all enchiladas, then sprinkle remaining cheese atop.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  8. Remove from the oven and let sit for a few minutes before serving with your favorite toppings.
