Step-by-Step Instructions for Beef Enchiladas
- Preheat your oven to 350°F (175°C).
- In a large skillet, over medium heat, add 1 pound of lean ground beef. Cook the beef thoroughly for about 6-8 minutes.
- Pour in 1 cup of chunky salsa into the cooked beef mixture and stir well. Continue cooking for an additional 2-3 minutes.
- Place 8 (8-inch) tortillas on a microwave-safe plate and cover with a damp paper towel, microwaving for 10-15 seconds.
- On each tortilla, place a generous amount of the beef and salsa mixture, followed by a sprinkle of cheese. Roll tightly and place seam-side down in your baking dish.
- Pour the can of red enchilada sauce evenly over the top of all enchiladas, then sprinkle remaining cheese atop.
