  • 1 teaspoon Oregano
  • ½ teaspoon Paprika

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Spread an even layer of uncooked long grain white rice across the bottom of a 9x13 inch baking dish.
  2. Pour chicken broth over the rice, ensuring the rice is fully covered without stirring.
  3. In a separate mixing bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, paprika, salt, and pepper to craft the tzatziki sauce. Mix until well blended.
  4. Pat the chicken breasts dry with paper towels, drizzle with olive oil, and sprinkle with salt and pepper. Position the chicken on top of the rice in the baking dish.
  5. Spoon the tzatziki sauce over the chicken, ensuring it’s well coated.
  6. Cover the baking dish tightly with aluminum foil and bake for 50-60 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from oven and let it rest for 5 minutes before uncovering. Garnish with fresh dill, parsley, or lemon wedges.
