Preparation
- Preheat your oven to 375°F (190°C). Spread an even layer of uncooked long grain white rice across the bottom of a 9x13 inch baking dish.
- Pour chicken broth over the rice, ensuring the rice is fully covered without stirring.
- In a separate mixing bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, paprika, salt, and pepper to craft the tzatziki sauce. Mix until well blended.
- Pat the chicken breasts dry with paper towels, drizzle with olive oil, and sprinkle with salt and pepper. Position the chicken on top of the rice in the baking dish.
- Spoon the tzatziki sauce over the chicken, ensuring it’s well coated.
- Cover the baking dish tightly with aluminum foil and bake for 50-60 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from oven and let it rest for 5 minutes before uncovering. Garnish with fresh dill, parsley, or lemon wedges.
