Ingredients
  

Watermelon Layer
  • 1 small seedless watermelon cut into chunks
  • 2 tablespoons honey optional, adjust to taste
Kiwi Layer
  • 4 medium kiwi peeled and cut into chunks
Optional Ingredients
  • 1 tablespoon lime juice optional for added zing
  • 2 tablespoons agave syrup vegan alternative to honey

Method
 

Watermelon Layer Preparation
  1. Cut the watermelon into chunks and blend until smooth to create about 2 cups of watermelon puree.
Popsicle Assembly
  1. Fill popsicle molds three-quarters full with the watermelon puree and freeze for 30 minutes.
Kiwi Layer Preparation
  1. Blend the kiwi until smooth to create about 1 cup of kiwi puree. Mix in honey if desired.
Final Freezing
  1. Pour the kiwi puree over the watermelon layer and insert popsicle sticks. Freeze for at least 4 hours.
Popsicle Removal
  1. Soak the molds in hot water for 5 seconds and gently pull out the popsicles.
