Preparation
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, then cut into one-inch pieces.
- In a medium saucepan, melt the butter, then stir in honey and optional cinnamon, simmering for 2-3 minutes.
- Pour the glaze over the carrots and toss until well-coated.
- Spread the glazed carrots on a lined baking sheet and sprinkle with salt. Roast for 20-25 minutes.
- Once done, garnish the carrots with fresh parsley and serve.
