Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or substitute with turkey, chicken, or lamb
  • 1 cup Breadcrumbs adjust for desired texture
  • 1/4 cup Fresh Parsley chopped finely
  • 1/2 cup Grated Parmesan Cheese freshly grated
  • 1 tsp Garlic Powder or use fresh minced garlic
  • 1 tsp Dried Oregano
  • 1/2 tsp Ground Cumin optional
  • 1/4 tsp Ground Cinnamon
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 tbsp Olive Oil for drizzling
For the Bowl
  • 2 cups Cooked White Rice
  • 1 cup Cherry Tomatoes halved
  • 1 medium Cucumber diced
  • 1/2 medium Red Onion thinly sliced
  • 1/2 cup Kalamata Olives pitted
  • 1/2 cup Tzatziki Sauce for topping
  • 1 tbsp Fresh Lemon Juice for squeezing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) with the oven rack in the middle.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, parsley, Parmesan cheese, garlic powder, oregano, cumin, cinnamon, salt, and pepper. Mix thoroughly.
  3. Shape the mixture into 1 to 1.5-inch meatballs, making about 18 to 24 meatballs.
  4. Line a baking sheet with parchment paper. Place the meatballs on the tray, drizzle with olive oil, and bake for 15-20 minutes.
  5. While the meatballs are baking, cook the white rice according to package instructions.
  6. In a separate bowl, mix halved cherry tomatoes, diced cucumber, sliced red onion, and pitted Kalamata olives.
  7. Layer cooked rice in serving bowls, add the veggie mixture, and top with baked meatballs.
  8. Add tzatziki sauce over the meatballs and finish with a squeeze of fresh lemon juice.
