- Preheat your oven to 350°F (175°C).
- Cut the bacon into halves and place it in a frying pan over medium heat. Cook for about 5 minutes, stirring occasionally until slightly curled but undercooked. Drain on paper towels.
- Generously spray a 9x13 baking dish with nonstick cooking spray and arrange the brioche dinner rolls snugly within the dish.
- Using a sharp knife, carefully cut circles in the tops of each roll to create a small 'bowl' for the egg.
- Melt some butter and brush the inside of each roll.
- Sprinkle 1 tablespoon of shredded cheddar cheese into each roll, followed by half a slice of bacon.
- Carefully crack an egg into each roll, taking care not to break the yolk.
- Sprinkle each egg with salt, pepper, garlic powder, and onion powder.
- Bake for approximately 30 minutes, until the eggs are mostly set but slightly soft in the center.
- Remove from the oven and sprinkle chopped green onions over the top before serving warm.
